If there’s anything I’ve learned over the years when it comes to special occasions, it’s that stressing out over the meal is a real mood killer—and completely unnecessary. Whether it’s a birthday, anniversary or Valentine’s Day, the last thing you want to be doing is spending time in the kitchen instead of with your sweetie.
I’ve had to learn the hard way. There was the time we ordered Thai takeout for our anniversary because the gnudi disintegrated or the time the cheesy pasta for my husband’s birthday turned to mush and, as a result, I did, too. This year, I’m keeping our Valentine’s Day dinner sweet and simple. And these devil’s food cupcakes are a wonderful way to cap off a romantic meal.
What I love most about these cupcakes—besides their rich chocolate flavor—is how easy they are to make. You can literally mix the batter, “bake” them and eat them in less than 15 minutes, which is fabulous if you want to enjoy a long, leisurely dinner. Three minutes in the microwave is all you need to create a tasty, special dessert for you and whomever you plan to share it with.

6tablespoons Gold Medal™ unbleached all-purpose flour

1/2teaspoon baking powder

3tablespoons granulated sugar

3tablespoons packed light brown sugar

1/4cup unsweetened Dutch processed baking cocoa

2eggs
-
1/4cup vegetable oil
-
1/4cup milk

Powdered sugar
Directions

1In medium bowl, mix flour, baking powder, granulated sugar, brown sugar and cocoa with whisk until thoroughly combined. Add eggs, oil and milk; stir with whisk until smooth.

2Pour batter evenly into 2 (1-cup) microwavable coffee cups. Microwave on High about 3 minutes or until outsides edges are firm and centers are almost set. Watch to make sure the batter doesn’t overflow (if it looks like it’s about to overflow, stop the microwave until the batter settles back down, then continue to heat).

3Immediately sprinkle cupcakes with powdered sugar. Serve warm.
