A friend of mine told me how to make these treats in a simple way, and I love the method. It starts by preparing the cake mix and then rolling the dough into balls that get baked like cookies. I find that if you first give your hands a good spray of cooking oil, the dough is easier to roll. The whoopie pies can be made in many different flavors. This variation is one I came up with. I am sure you will come up with your own great creations!

These bake up into light cookie cakes, which I fill with my butter and cream cheese frosting. After rolling them in some rainbow sprinkles, they are ready to enjoy. I love the fact that I can make these whenever I’m in the mood for cake but don’t want the hassle of having a big cake that needs to be sliced and served. Plus, these goodies can be packed in a lunch or picked up as an on-the-go snack with no mess or fuss.

They are also great as an added dessert at a party. How many times does the birthday boy or girl want chocolate cake but there’s a guest who can’t eat chocolate? Well, if you make a chocolate birthday cake, you can offer these little whoopie pies as another option. You could also use Betty Crocker® Gluten-Free cake mix as an option for your guests. 

Party or not, you can make these hand-held treats any time you like…and you don’t have to turn a year older to do it!

Birthday Cake Whoopie Pies

Ingredients

  • Cookies
    • 1box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
    • 3tablespoons milk
    • 1/4cup vegetable oil
    • 2eggs
  • Filling
    • 1/4cup butter, softened
    • 4oz (half of 8-oz package) cream cheese, softened
    • 1 1/4cups powdered sugar
    • 1tablespoon milk
    • 1teaspoon vanilla
  • Garnish
    • Betty Crocker™ Decors rainbow mix candy sprinkles

Directions

  • 1Heat oven to 350°F. Lightly spray cookie sheets with cooking spray, or line with cooking parchment paper or silicone baking mat.
  • 2In large bowl, mix all cookie ingredients with wooden spoon until wet dough forms. Spray hands generously with cooking spray; roll teaspoonfuls of dough into 2-inch balls. Place about 1 inch apart on cookie sheets.
  • 3Bake 10 minutes or until set. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  • 4Meanwhile, in medium bowl, beat all filling ingredients with electric mixer on medium speed 2 to 3 minutes or until smooth. Cover; refrigerate until ready to assemble.
  • 5For each whoopie pie, spread desired amount of filling on bottom of 1 cookie. Top with second cookie, bottom side down; gently press together. Roll sides of pies in sprinkles. Store covered in refrigerator.
