Fresh Summer Peach Cobbler

Peaches are a summertime treat. What better way to enjoy them than in a fresh peach cobbler?

Summer is a favorite time of the year for many reasons, but for me, it means fresh peaches. When I think of the perfect summer dessert, Peach Cobbler is top on the list. I love the tart sweet taste of the peaches combined with the warm topping and some cold vanilla ice cream melting over it. I’m drooling just thinking about it!

Most people don’t make this dessert because they think it’s too time-consuming or too difficult to use fresh peaches. I can tell you that it’s so easy and so worth it. When peaches are abundant during the summer months, I cook them and serve them in many different ways.

When you are making a peach cobbler or pie, it’s important to peel the peaches before you pit them and slice them. One simple way to do this is to boil the peaches in a large pot of water for about 1-2 minutes. Then remove and peel them. You will find that most—if not all—of the skin will peel off easily.

Once I peel and slice my fruit, I put it in a greased 9 x 13 baking dish. I don’t stress too much about some of the skin remaining on the peaches. As long as most of it is off, it will be fine. I then sprinkle sugar, lemon juice, cinnamon and cornstarch on top of the peaches and mix lightly with a spoon to coat. I dot the top of the fruit with butter and then make my cobbler topping.

Betty Crocker® sugar cookie mix and some almond extract makes an amazingly simple and delicious cobbler topping. I mix the dough and form it into thin disks with my hands. Lay them on top of the peach mixture before baking.

I like to serve my cobbler warm and topped with vanilla ice cream. Next time you buy fresh peaches, treat yourself to some fresh peach cobbler. You’ll be happy you did!
