- 1/3 cup uncooked regular long grain rice
- 1/3 cup uncooked wild rice
- 3/4 cup thinly sliced red onion
- 2 cloves garlic, finely chopped
- 3/4 cup chicken broth
- 1 small yellow bell pepper, chopped (1/2 cup)
- 1/4 cup raisins
- 1/4 cup chopped dried apricots
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons red wine vinegar
- 1 teaspoon olive or vegetable oil

Step1Cook and drain regular rice as directed on package—except omit salt. Cook and drain wild rice as directed on package—except omit salt.

Step2Cook onion, garlic and broth in 10-inch nonstick skillet over medium-high heat 5 to 6 minutes, stirring occasionally, until liquid has almost evaporated. Stir in regular rice, wild rice, bell pepper, raisins, apricots, salt and pepper. Cook over medium heat about 2 minutes, stirring constantly, until heated through. Stir in parsley, vinegar and oil.
