Pork Medallions With Hot Pineapple Glaze

Ingredients
- 1-pound pork tenderloin
- 1/4 teaspoon salt
- 1/3 cup pineapple or orange marmalade spreadable fruit
- 2 teaspoons Worcestershire sauce
- 2 teaspoons cider vinegar
- 1/2 teaspoon grated gingerroot
- 1/4 teaspoon crushed red pepper, if desired

Step1Remove fat from pork. Cut pork into 1/4-inch slices. Sprinkle both sides of pork with salt.

Step2Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 5 to 6 minutes, turning once, until no longer pink. Remove pork from skillet; keep warm.

Step3Mix remaining ingredients in skillet; heat to boiling. Boil and stir 1 minute. Serve sauce over pork.
