Ingredients
- 2 tablespoons butter or margarine
- 1 cup uncooked regular long-grain rice
- 1/2 cup sliced green onions (5 medium)
- 1/2 cup pine nuts
- 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
- 1 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1/4 cup sliced green onion tops

Step1Melt butter in 3-quart saucepan over medium-high heat.

Step2Cook rice, 1/2 cup onions and the nuts in butter about 5 minutes, stirring occasionally, until nuts are light brown.

Step3Stir in broth, lemon peel and salt. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 14 minutes; remove from heat. Fluff rice lightly with fork.

Step4Cover and let stand 5 minutes. Sprinkle with onion tops.
