This de-constructed strawberry cheesecake is super easy to make — a light, elegant dessert served in a glass and ready for any occasion in just 20 minutes.

Ingredients

  • 2 cups fresh strawberries, sliced
  • 1/4 cup powdered sugar
  • 1 1/2 cups ready-to-eat cheesecake filling
  • 1 teaspoon grated lime peel
  • 1 tablespoon lime juice
  • 6 crisp gourmet cookies, crumbled
  • Whipped cream, if desired
  • Additional grated lime peel, if desired
  • Lime slices, if desired

    In medium bowl, mix strawberries and 2 tablespoons of the powdered sugar.

    In small bowl, mix cheesecake filling, 1 teaspoon grated lime peel, the lime juice and remaining 2 tablespoons powdered sugar.

    Spoon cheesecake mixture into 6 (6-oz) glasses or ramekins. Sprinkle with crumbled cookies. Top with strawberries. Garnish with whipped cream, additional lime peel and lime slices. Serve immediately.
