Couscous with Vegetarian Spaghetti Sauce

- 2 cups water
- 1 1/3 cups uncooked couscous
- 1 (28-oz.) jar chunky vegetable spaghetti sauce
- 1 (15-oz.) can garbanzo beans (Chickpeas), drained, rinsed
- 1/8 to 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons chopped fresh parsley
Instructions

Step1In medium saucepan, bring water to a boil. Stir in couscous. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed.

Step2Meanwhile, in medium saucepan, combine spaghetti sauce, beans and red pepper flakes. Cook over medium heat for 5 to 7 minutes or until thoroughly heated, stirring occasionally.

Step3Fluff couscous with fork. Serve sauce mixture over couscous; sprinkle with parsley. If desired, sprinkle with shredded fresh Parmesan cheese.
