Chicken with Orange-Pecan Rice

Ingredients
- 1 package (6.2 oz) fast-cooking long-grain and wild rice mix
- 2 cups orange juice
- 1/4 cup chopped pecans
- 1 jar (2 oz) diced pimientos, drained
- 4 boneless skinless chicken breasts (about 1 1/4 lb)
- 1/2 teaspoon paprika
Instructions

Step1Heat oven to 350°F. Spray 8-inch square pan with cooking spray.

Step2In pan, mix rice, seasoning packet from rice mix, orange juice, pecans and pimientos. Place chicken on rice mixture; sprinkle with paprika.

Step3Cover with foil. Bake 35 to 45 minutes or until liquid is absorbed and juice of chicken is clear when center of thickest part is cut (170°F).
