Crunchy veggies get a hearty protein boost from everyone's favorite combination, bacon and cheese, in this rich and creamy side dish.
Cauliflower Salad

Ingredients
- 10 slices bacon, cut into 1/2 inch slices
- 1 cup mayonnaise or salad dressing
- 1/4 cup sugar
- 1 medium head cauliflower (about 2 lb), separated into florets
- 1 small onion, finely chopped
- 1 small green bell pepper, finely chopped
- 8 oz Colby Monterey jack cheese, cut into 1/2 inch cubes
Instructions

Step1In 12-inch nonstick skillet over medium heat, cook bacon pieces 5 to 7 minutes or until crisp. Drain on paper towels; set aside.

Step2In large bowl, stir together mayonnaise and sugar. Stir in cauliflower, onion, and bell pepper until vegetables are coated with mayonnaise mixture.

Step3Just before serving, stir in cheese. Sprinkle with bacon.
