Ingredients

  • 1 egg
  • 2/3 cup vegetable oil
  • 2/3 cup buttermilk
  • 1 1/2 cups mashed very ripe bananas (4 medium)
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups cake flour
  • 1 cup quick-cooking or old-fashioned oats
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2/3 cup chopped nuts
  • 2/3 cup raisins
  • Powdered sugar, if desired

Instructions

    Heat oven to 350°F. Spray rectangular pan, 13x9x2 inches, with cooking spray.

    Beat egg, oil, buttermilk, bananas, granulated sugar and vanilla in large bowl. Stir in flour, oats, baking soda, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pan.

    Bake 30 to 35 minutes or until toothpick inserted in center comes out clean; cool. Sprinkle with powdered sugar.
